If you are accustomed to consuming fresh durian, please be aware that frozen durian presents a different experience. In Australia, options are limited due to biosecurity regulations designed to prevent the introduction of durian seed borer worms into the country.
Thailand is currently the sole nation capable of exporting high-quality fresh Monthong durian to Australia.
If you have encountered durian with a soggy texture, this is likely due to improper defrosting.
From the experiences of knowledgeable customers, it has been observed that moisture in the durian pulp is a result of the defrosting process. For large frozen durians weighing over 2 kilograms, it is advisable to defrost them in the refrigerator. This allows moisture to be gradually removed from the husk. Conversely, if left at room temperature, moisture from the frozen husk will migrate into the durian pulp, negatively impacting its flavor.
Smaller durians typically defrost more effectively at room temperature. The duration required for defrosting depends on the size of the durian and the temperature of your refrigerator, ranging from approximately 8 to 24 hours 🤷🏻♀️.
It is noted that Black Thorn durian achieves a better flavor at room temperature. Therefore, defrost it in the refrigerator and then consume it at room temperature. Conversely, Musang King can be enjoyed at either temperature, depending on personal preference.
Please note that this advice does not account for those who prefer durian with an ice-cream-like texture 😊.
